Sweet and Savory Asian Marinated Flank Steak

Steak doesn’t always sound like the best option when you’re operating on the lines of affordability and speedy cooking time. However, I don’t believe that steak should only be for fancy dinners at nice restaurants. I want to have it at home, too! This recipe solves both the steak price and time dilemmas. My sweet and savory Asian marinated flank steak is altogether delicious, affordable, and takes little time to pull together.

At just over $8/pound this is a great beef purchase for the price point. I love that flank steak is fairly thin. It can be cooked to a perfect medium rare with just a good, long sear on each side. For the same reason, it’s fairly easy to impart some great flavor in the meat. Flank steaks don’t take long to marinade before they’re full of flavor and retain their moisture.

Flank steak isn’t a fatty cut of meat, so any opportunity to add moisture back is a plus, and this marinade does just that. The salt and vinegar flavor the meat throughout, and help seal in the steak’s juices – sort of like a good brine does. I recommend marinating this steak for at least two hours, but you can get good flavor with just an hour of marinade.

I love soy sauce and honey together. Something about that sweet and savory combination is so delicious on the flank steak. I like that the soy sauce adds just the right amount of salt to flavor the steak, without needing any additional seasoning. Furthermore, the honey smooths out the saltiness for a well rounded flavor profile. *Insert happy dance here* LOL.

When serving, thinly slice the steak against the grain for the most tender bite. If you’re up for it, make a quick dipping sauce out of low sodium soy sauce, some lime juice, and a little bit of honey. I promise, it’s a delicious add on if you have the time. My favorite side item? This Asian marinated flank steak is also delicious with some blanched green beans tossed in garlic butter and lemon juice.

Sweet and Savory Asian Marinated Flank Steak

Ingredients

  • 1 ¼ lb flank steak
  • c soy sauce
  • c water
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp fish sauce
  • 1 tsp sesame oil
  • ¼ tsp dried ginger
  • ¼ tsp dried mustard

Instructions

For the Marinade

  • Mix all ingredients except steak together until thoroughly combined.
  • Add steak to a gallon size zip top bag along with the marinade. Seal tightly and store in a bowl in the fridge for 2-4 hours.*

Cook the Steak

  • Heat about two tablespoons of oil in a large skillet over medium high heat.
  • Once oil is rippling, add steak and sear each side until color forms (about 3-4 minutes each side).
  • Transfer steak to a cutting board to let rest. Tent with foil and rest for an additional 8 minutes.
  • Serve immediately and enjoy!

Notes

*It needs at least an hour for good flavor, but 2-4 is ideal. You could make in the morning and leave all day, if you’d like.
