Hearty Honeycrisp Apple Salad with Simple Dijon Vinaigrette

Ingredients
For the Salad
4cmixed greens
½honeycrisp applelarge, thinly sliced
¼cwalnuts
2tbspblue cheese
For the Vinaigrette
3tbspolive oil
2tbspwhite wine vinegarcan be subbed for apple cider vinegar
1tbspdijon mustardi like mine a little bit grainy
½tsphoney
¼tspcracked black pepper
saltto taste
Instructions
Make the Dijon Vinaigrette
Whisk together oil, vinegar, mustard, and honey for about a minute, or until emulsified and creamy.
Give your dressing a taste and add salt and pepper as you prefer. Set dressing aside.
Assemble the Salad
Spread mixed greens over large platter and top with sliced apples. Crush walnuts with fingers and scatter around the plate. Do the same with the blue cheese.
Drizzle dressing over top, just before serving. Enjoy!
