Hearty Honeycrisp Apple Salad with Simple Dijon Vinaigrette

Thinly sliced apples, hunks of blue cheese, easy-peasy vinaigrettes– these are a few of my favorite things! Make this hearty honeycrisp apple salad year round, for a crowd, or for yourself. This salad has all of those things that make a dish balanced: crunchy, sweet apples, creamy blue cheese, rich walnuts, and an acidic dressing.

I think the one thing that I do really love about a salad is the ease of it. There’s no cooking involved (at least not for this one). It’s as simple as tossing some ingredients together in a bowl. The hardest part of this recipe, honestly, is slicing the apples. And if that’s the only challenge we have to get over, then I think this one is pretty smooth sailing.

The dressing in this salad is the bomb. It’s my ABSOLUTE FAVORITE and my go-to when I’m not sure what to make. I don’t keep dressings at home, I’ve always made them from scratch. That’s probably why this one is my favorite, because it uses ingredients that I always keep on hand. We love a #pantrystaple! Another thing that makes this simple dijon vinaigrette so special is the texture. The mustard turns what would be a pretty runny dressing into a silky, creamy vinaigrette. No dairy required… I love that for us!

Hearty Honeycrisp Apple Salad with Simple Dijon Vinaigrette

Servings: 2

Ingredients

For the Salad

  • 4 c mixed greens
  • ½ honeycrisp apple large, thinly sliced
  • ¼ c walnuts
  • 2 tbsp blue cheese

For the Vinaigrette

  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar can be subbed for apple cider vinegar
  • 1 tbsp dijon mustard i like mine a little bit grainy
  • ½ tsp honey
  • ¼ tsp cracked black pepper
  • salt to taste

Instructions

Make the Dijon Vinaigrette

  • Whisk together oil, vinegar, mustard, and honey for about a minute, or until emulsified and creamy.
  • Give your dressing a taste and add salt and pepper as you prefer. Set dressing aside.

Assemble the Salad

  • Spread mixed greens over large platter and top with sliced apples. Crush walnuts with fingers and scatter around the plate. Do the same with the blue cheese.
  • Drizzle dressing over top, just before serving. Enjoy!
